These are useful in a million different applications from salads, to blending them into a dip or in soups like we are intending these.
For this super simple recipe preheat the oven to 250F.
Cut the cherry tomatoes in half and place them in a large mixing bowl. Add sugar, olive oil, salt, pepper, fresh thyme, bay leaf, and balsamic vinegar.
Spread them onto a sheet pan with parchment paper or a silicon baking match.
Cook for 1.5 hrs. Allow the tomatoes to cool on the counter then you can store them in a mason jar with a little olive oil over the top.
